Potato Chip Chicken Casserole

 Servings  5

Ingredients

  • 2 cups chopped, cooked chicken meat
  • 1 cup cooked white rice
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 2/3 cup mayonnaise
  • 2 tablespoons grated onion
  • 1/2 cup chopped celery
  • 1 (8 ounce) can sliced water chestnuts
  • 1 tablespoon lemon juice
  • 1/2 cup shredded sharp Cheddar cheese
  • 2 cups crushed potato chips
  • 1/4 cup water
  • salt and pepper to taste

Directions

1.                  Preheat oven to 400 degrees F (200 degrees C).
2.                  In a large bowl combine the chicken, rice, soup, mayonnaise, onion, celery, water chestnuts, lemon juice, water, salt and pepper. Mix well. Spread this mixture into a lightly greased 9x13 inch baking dish. Cover with cheese, then potato chips. Bake in the preheated oven for 20 to 25 minutes or until the potato chips are lightly browned.
We got the modem and the printer up and running.  Hopefully the JET program will contune to run as well.
Went to my Sister Jackie's house for a belated Birthday.  We had a nice time.  She made a really good fruit crisp.  I will have to get the recipe from her.
Hard to beleve that she is 65 now.  Wow! how time flies.
Hours at work are picking up becacue of the Holidays.  I am working tomorrow and Friday and Saturday.  So far not Sunday.
Going to have coffee with Jayne on Thursday.  Looking forward to it.  Haven't seen her for a while now.
Melinda still hasen't got the locks on her dores yet.  I hate the fact that her brother can still come and go.  I worrie about her.  She is my friend and I want nothing but the best for her.

Laura's Quick Slow Cooker Turkey Chili

Prep Time 15 Min Cook Time 4Hrs Ready In 4 Hrs 15 Min

Servings  8

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound ground turkey
  • 2 (10.75 ounce) cans low sodium tomato soup
  • 2 (15 ounce) cans kidney beans, drained
  • 1 (15 ounce) can black beans, drained
  • 1/2 medium onion, chopped
  • 2 tablespoons chili powder
  • 1 teaspoon red pepper flakes
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon ground cumin
  • 1 pinch ground black pepper
  • 1 pinch ground allspice
  • salt to taste

Directions

1.                  Heat the oil in a skillet over medium heat. Place turkey in the skillet, and cook until evenly brown; drain.
2.                  Coat the inside of a slow cooker with cooking spray, and mix in turkey, tomato soup, kidney beans, black beans and onion. Season with chili powder, red pepper flakes, garlic powder, cumin, black pepper, allspice and salt.
3.                  Cover, and cook 8 hours on Low or 4 hours on High.
We toned down the spices a bit because we don't like reail spicey food.
I just have to wonder what is so funny about my working ab Sams club?  It is a job and it is helping to pay the bills.  A certen family member has laughed twice now at me whenever he has brought up the subject of my working at sams club. 
I feel that I am where I am supposed to be.  I have looked into working at other places but, this is where I am supposed to be.  I have told Dan about this.  He sujected to tell the person that they are being very disrespectful of me and to stop.  I think that I will take his advice.  For me this job is not about money it as about being able to pay the bill and just to live.
Spent time on the phone with microsoft yesterday.  They sujested that we get our computer to a faster speed.  Called quest and we are getting an upgrade and we have to buy a new modem.  Thanks to JET.  The program is so finikey.  I don't like it.
They have me down to work the 30th.  We are going to call in so that I can attend Jackie's Birthday.

Tamale Corn bread pie

8 ounces extra-lean ground chuck
3 cups whole kennel corn
2 cups canned tomatoes
onion, finely chopped
1 tablespoon chili powder
1 teaspoon cumin
¼ teaspoon ground red pepper
2 cups tomato juice
¼ cup unbleached flout'
1 ½ cups cornmeal
1 tablespoon baking powder
¾ cup skim milk
2 eggs
2 tablespoons olive oil
Brown ground chuck in skillet, stirring until crumbly; drain. Stir in
corn, tomatoes, onion, chili powder, cumin and ground
red pepper. Add mixture of tomato juice and flour and mix well.
Simmer covered, over low heat for' 5 minutes, stirring occasionally.
Spoon into 9x13-inch baking dish. Combine cornmeal and baking
powder in bowl and mix well. Whisk skim milk, eggs and olive oil in
bowl until blended. Stir into cornmeal mixture until mixed. Spread
evenly oven prepared layer". Bake at 425 degrees for' 2O to 25
minutes on until corn bread topping is cooked through.
In stead of the ground chuck we used bison.  I think that I like the flavor of bison rather than beef.  It is a lot milder than the beef. 
Saw our neighbor Ron yesterday I think that he told me his dog Tim had died.  I am not sure how though.  I will have to ask him about it the next time I see him.  He was just with Phebe.  I hope that I am wrong about the dog.  He takes them every where with him.

Halibut With Tomato & Cilantro Linguine Recipe

Ingredients

 
2 tablespoons (30 ml) olive oil
1 1/2 tablespoons (23 ml) lime juice
1 tablespoon drained capers
4 small pear-shaped (Roma-type) tomatoes (about 8 OZ./250 g total), at room temperature, seeded and chopped
2 cloves garlic, minced or pressed
1/4 teaspoon ground red pepper (cayenne)
1/3 cup (15 g) cilantro leaves
1 1/4 to 1 1/2 pounds (565 to 680 g) haiibut steaks or other white- fleshed fish steaks such as sea bass (about 3/4 inch/2 cm thick)
Salt and black pepper
Olive oil cooking spray
1 package (10 oz./255 or 285 g) fresh linguine

Directions

1. In a large bowl, stir together oil, lime juice, capers, tomatoes, garlic, red pepper, and cilantro; set aside. Remove and discard any skin from fish, then rinse fish and pat dry. Cut fish into 4 serving-size pieces; season to taste with salt and black pepper.
2. Spray a wide nonstick frying pan with cooking spray; place over medium-high heat. Add fish and
cook, turning once, until lightly browned on outside and just opaque but still moist in thickest part; cut to test (6 to 8 minutes).
3. Meanwhile, in a 5- to 6-quart (5- to 6-liter) pan, cook linguine in 3 quarts (2.8 liters) boiling water just until tender to bite (1 to 2 minutes); or cook according to package directions. Drain pasta well. Set 2 tablespoons (30 ml) of the tomato mixture aside; lightly mix remaining mixture with hot pasta.
4. Divide pasta among 4 warm plates; top each serving with a piece of fish, then top fish evenly with reserved tomato mixture.
This was quick and easy.  Could not find fresh linguine so we used regular.  It tasted just fine

Yap Yap Casserole

  • 1 (8 ounce) package Chinese noodles, cooked and drained
  • 1 lb ground pork
  • 3 stalks celery, chopped
  • Worcestershire sauce to taste
  • 1 onion, chopped
  • 1 (10 3/4 ounce) can condensed tomato soup
  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 1 (10 1/2 ounce) can condensed vegetable soup
  • 1 Cup shredded  sharp cheddar cheese

Directions:

          1. Cook noodles according to package directions.

2. Fry the pork, celery, and onions until done. Stir in Worcestershire sauce.  Stir in the soups. Stir in the cooked noodles. Pour into a deep casserole dish and top with cheese.
3. Bake at 350 degrees for 15 minutes until bubbly.
I am finally caught up on my recipe posting!! I had a hard time finding the turkey thigh recipe.  Ended up having to create a PDF and then converted it into a word document.  It takes a while some times to get things done:)

Savory Cheese Soup

Total Time:30 Minutes Prep Time 15 Minutes Cook Time 15 Minutes

Directions:

1.    In a large saucepan, saute onion in butter till tender.
2.    Add flour, salt, pepper & garlic powder, stir until smooth.
3.    Gradually add milk, cook and stir over medium heat until thickened and bubbly.
4.    Brink chicken broth to a boil in a small saucepan. Add carrots and celery to broth and simmer 5 minutes or until veggies are tender 8 to 10 Minutes
5.    Add to milk mixture and stir until blended.
6.    Add cheese. Cook until melted.  Don’t boil.  Garnish with chives if desired.

Dan suggested that we add sausages and a small potato.
I was still having trouble with the JET but, since I stop using GMail I think that the problems may be over (I hope)  Gmail wanted to convert Internet explorer.  Microsoft told me not to.  Every one has been grate about not emailing me in GMail.  It's nice that people are willing to work with ya.

Turkey Thighs With Cranberry Compote


4 large turkey' thighs (about 4 pound
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/2 teaspoon fresh chopped rosemary, or
1/4 teaspoon dried rosemary leaves, crumbled
For garnish: orange slices and sprigs of fresh rosemary (optional)
Cranberry Compote
1 teaspoon olive oi1
1/2 cup chopped onion
1 can (about 16 ounces) whole-berry cranberry sauce
1/2 teaspoon freshly grated orange peel
1 medium-size orange'pee1ed, sectioned, and chopped coarse
(about ½ cup)
1 tablespoon light or dark brown sugar
1 tablespoon balsamic vinegar
1/2teaspoon fresh chopped rosemary or ¼ teaspoon dried
rosemary leaves, crumbled
14 teaspoon salt
1/4 teaspoon ground black Pepper
1. In a 1-gallon-size plastic zipper-type bag, combine the turkey thighs'
olive oil, sa1t, pepper, and rosemary. Close the bag, pressing out the air' and
turn to coat the turkey' Refrigerate for 30 minutes'
2. Meanwhile, make the compote. In a medium-size saucepan' heat the oil
over medium heat. Add the onion and cook, stirring often' for 4 to 5 minutes,
or until soft. Stir in the remaining ingredients and simmer gently for 10
minutes, stirring occasionally. Spoon the compote into a medium-size bowl
and 1et cool to room temperature'
3. Heat a gas grill to medium-high, prepare a charcoal fire' or heat a broiler.
Grill or broil the turkey thighs 4 to 6 inches from the heat source for
about 20 minutes, turning 3 or 4 times during cooking, until crispy golden
on the outside and cooked through.
4. Transfer the turkey to a serving platter and garnish with fresh orange
slices and sprigs of rosemary. Serve with the compote'
Took the dog for a walk today.  When I got home a took a shower.  Not sure what happened but, I did not feel well after that.  Thought that I was going threw up.  my guts felt like I was going to throw up.  I drank a zip phizz and felt a little better.  I still is bothering me.
