Turkey Patties

Prep Time: 10 Min   Cook Time 10 Min Ready In 20 Min Serves 4

Ingredients

  • 1 pound ground turkey
  • 1/4 cup fine dry bread crumbs
  • 1 egg
  • 2 tablespoons minced green onions
  • 1 clove garlic, minced
  • 1 teaspoon minced fresh ginger root
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 2 tablespoons chopped fresh parsley

Directions

  1. In a large bowl, blend turkey with bread crumbs, egg, green onion, garlic, ginger and soy sauce. Shape into 4 patties.
  2. Heat oil in a wide skillet over medium heat. Cook burgers for 5 minutes on each side, or until cooked through. Garnish with chopped parsley.
Took the dog for a walk this morning.  I saw a house on the corner of 4 ave and 182nd, there were two pick up trucks parked in the drive way.  I am hoping that some one is going to be moving in there.  It has been empty for almost two years.
This Sunday is the community BBQ with the Mars Hill Church.  Looking forward to going going to make a Sweet Potato salad.  We had a lot of fun the last time we went.
This Coming Monday we are going to my sister Jakie's House it was supposed to be going away/ birthday party for Julie.  She will not be going to Florida as planed.  The school she was going to teach at had to close down due to lack of funds.  I was sad for her.

Tropical Strawberry

Prep Time: 10 Min  Ready In 10 Serves 4

Ingredients

  • 1 1/2 cups frozen strawberries
  • 1 cup frozen pineapple chunks
  • 1/2 cup milk
  • 1 1/2 cups yogurt
  • 2 tablespoons white sugar
  • 1 cup crushed ice

Directions

  1. In a blender, blend the strawberries, pineapple, milk, yogurt, sugar, and ice until smooth.
The first time I did this recipe I used my blender.  I found that it was to much for my blender  so I used my food processor.  It was a lot faster.  I also could not find frozen pineapple so we used an 8oz can of pineapple chunks worked like a champ. I also used strawberry yogurt.  We really enjoyed it.

We found a new park or rather one of our neighbors told us about it.  It is a really cool park. wheel chair accessible. It goes from Sea tac over to the des moinas marina.  It also has dirt bike trails.  We have been there twice now and really enjoy it.  Here is the address.

GARLICKY SALSA CHICKEN


Prep 10 min Cook 11 to16 min Serves: 4

r/z cup yellow cornmeal
2 tablespoons chopped parsley
1/2 teaspoon salt
1/4 teaspoon pepper
4 skinless, boneless chicken breast halves pounded to ¼ inch thickness
1/4 Cup  corn oil
2scallions, chopped
1medium tomato, seeded and & chopped
3 garlic cloves, crushed
jalapeno pepper, seeded and chopped
1/4cup tomato juice
1 tablespoon balsamic vinegar
1/4 cup dropped cilantro
1/2 teaspoon salt
1/4 teaspoon pepper
1. In a shallow dish, combine cornmeal, parsley, salt, and pepper. Lightly
coat chicken on both sides, shaking off excess.
2. In a wok, heat 2tablespoons oil over medium-high heat until hot, swirling
to coat sides of pan. Arrange chicken extending up sides of pan without
over lapping. Cook until brown on both sides, 6 to 8 minutes, Turning  and
rotating for even cooking. Remove to a serving plate.
3. same wok, heat remaining 2 tablespoons oil over medium-high heat.
Add scallions, tomato, garlic,  jalapeno pepper and cook, stirring, until
Scallions are. crisp-tender, 3 to 4 minutes  add tomato juice, vinegar, cilantro,
salt, pepper. Cook, stirring, until most of liquid is evaporated 2 to 4
minutes. Spoon salsa over chicken-and serve.

I learned how to scan this recipe into a PDF.  What a pain it was to cut in paste this into a word document.  It miss spelled word and it took a lot of time to clean it up.  I don't think that it works very well for recipes.  Perhaps I will try to scan something else.
Took the dog a walk around the school today.  Did not see the grumpy gentleman today I hope that things are going better for him.  Some one that gets that angry over where  one  putts their dog mess bag has something wrong.

Cheesy Penne Italian Shepherd's Pie


Ingredients

1/2 pound mini penne (or any mini short-cut pasta)
Salt
3 tablespoons extra virgin olive oil (EVOO)
1 pound ground turkey
3 cloves garlic, finely chopped
1 medium onion, diced
3 medium carrots, diced
1 medium zucchini, diced
11/2 tablespoons tomato paste
1 cup chicken stock, divided
1 tablespoon poultry seasoning
3 tablespoons butter
3 tablespoons all-purpose flour

Directions
Pre-heat oven to 400°F.
Place a large pot filled with water over high heat and bring to a boil to cook the pasta. Once boiling, add some salt and the pasta, and cook until al dente, according to package directions. Heads up -- reserve a mug of starchy water before draining the cooked pasta. Drain well and transfer pasta back to the cooking pot.
While the water is coming up to a boil for the pasta, place a large skillet over high heat and with 3 turns of the pan, add EVOO, about 3 tablespoons. Once the oil starts to ripple, add the ground turkey and break it up into small pieces as it cooks, using the back of a wooden spoon or a potato masher. Cook until the turkey is nice and brown, about 8-10 minutes.
Add the veggies and cook until tender, about 5 minutes. Add the tomato paste, ½ cup chicken stock, half of the reserved starchy water, poultry seasoning, salt and pepper. Continue to cook for 10 more minutes, stirring every now and then.
While the veggies and turkey are cooking, place a medium-size saucepot over medium heat with the butter. Once the butter melts, add the flour and cook 1 minute, whisking constantly so the flour doesn't burn. Whisk in the milk and the rest of the starchy pasta water and chicken stock, bring to a simmer and cook until thickened. Once thick, turn off the heat, add the cheese to the pot and stir until completely melted. Season with salt and pepper to taste.
Cover the bottom of a large, oven-safe baking dish with the turkey and veggie mixture. Meanwhile, add the cheese sauce to the reserved pasta in the pasta pot. Stir to coat, then transfer the cheesy pasta to the baking dish. Spread it out to cover the turkey mixture evenly. Place in the oven and bake until the top is golden brown, about 10 minutes.
I did not use provolone cheese.  I used Havarti cheese.  This did not melt up well.  Next time I will use mozzarella cheese.  I think that will melt up better and make a thicker sauce.


Yesterday I was out walking my dog Earl, and one of the neighbor's saw my putting my bag of dog mess in a garbage can of one of the neighbor's.  He was very upset.  He told me that I was tress passing and that he was going to call the police.  I told him to go ahead.  It wasn't his yard.  He told me not to put my dog mess bags in his garbage can.  I have never been in his yard since.  Some of the neighbors have given me permission to put my dog mess bags in their garbage cans.
I think that this guy has a problem and the best thing to do is be nice.  That is what God would want me to do.  I did not see him today.  I hope that what ever is bothering him will pass soon:)

Moms Fast Chili

Prep Time 10 Min Cook Time 20-30 Min Serves 6

Ingredients

2 tbInstand minced onion
1 can tomato Puree (28 oz)
1 tbChili powder (or to taste)
2 1/2 tsGround cumin
1 cnChili beans (kidney)
1 lbGround beef
1 cnCrushed tomatoes with added
1 mdOnion, chopped <=OR=>
1/2 tsGarlic powder
1 cnTomato paste (6 oz)

Directions

 1. In a large 4 qt dutch oven or large saucepan, cook beef and onion over medium-high heat, stirring often to break up meat, until lightly browned, 5 to 10 minutes. Drain off any excess fat

 2. Stir in all remaining ingredients. Heat to

 boiling. Reduce heat to medium low and simmer, uncovered for 10-15 minutes.
Instead of Beef I used pork.

Mac and Cheese Fran Style

2 C Macaroni
1 15oz Can Italian Stewed Tomatoes
1 15oz Can Tomato Sauce
1 4oz can Mmushrooms
3 C Mozzarella cheese
5 Mild Bar S Sausages cut up
Garlic powder to taste
Onion powder to taste

Directions

1. Cook Macaroni and cut up Sausages for 10 Min.  In separate bowl, mix together Tomato Sauce, Stewed Tomatoes, Mushrooms, garlic powder, Onion powder, and Mushrooms. 
2. Layer, Macaroni and Sausage.  On top of Macaroni and Sausage and Cheese then Tomato mixture.  Repeat layers with tomatoes on top.
Cook at 350 for 50 Min.
Serves 4
