Quick Lamb Curry


Prep 10 Mins Cooking Time 20 Mins Serves 4

Ingredients
Lean ground lamb 1 pound
Garlic 2 Clove (5gm), pressed  
Onion 1 Large, chopped   (I used one large bunch green onion)
Curry powder 1 Tablespoon  
1/2 teaspoon each ground ginger and ground cumin  
1 medium-size carrot, thinly sliced  
Red apple 1 Small, chopped  
1 small green pepper, seeded and chopped   (I did not use green pepper)
Regular 1 Can (14oz) Beef broth
 Red cayenne pepper 1 To taste  
Condiments: Sliced bananas. Major Grey chutney, plain yogurt, chopped peanuts, crumbled bacon

Directions
Crumble lamb into a wide frying pan over medium heat; cook, stirring, until browned, then spoon off and discard all but 2 tablespoons fat.

Add garlic, onion, curry powder, ginger, and cumin; reduce heat to low and cook, stirring often, until onion is very soft.
Add carrot, apple, green pepper, and broth.

Simmer, uncovered, until vegetables are tender and sauce is slightly thickened (about 20 minutes).

Season to taste with salt and red pepper.

While curry is cooking, prepare 3 or 4 condiments of your choice and place each in a separate bowl; pass at the table to sprinkle over individual servings.   

 This was sooooooo good!!!  I wish that we had leftovers!!! No such luck though L
For the last two days we have had dragon weather!!! Love it!!! We love the wind!!!  In one of the yards there are about three big fir trees and the wind sounds so awesome blowing through the branches!!  What a sound it makes!!!

Wednesday is our 20th anniversary!!! Can’t believe it has come so fast.  I am a lucky women!!! Dan is such a sweet and good man.  Thank you Jesus for him!!!
We go to the doctor on Wednesday and find out all the particulars for the 14th.  I am sure that all things will turn out ok.

Cuban Chicken


Serves 4
Ingredients

3 to 3 1/2-pound frying chicken, cut up 
 2 tablespoons olive oil or salad oil  
Garlic 2 Clove (5gm), pressed 
 Onion 1 Large, chopped   (I used 1 bunch green onion)
1 large green bell pepper, seeded and chopped  (Did not use green pepper)
 Potatoes 4 Small, skinned  
3/4 teaspoon each oregano leaves and ground cumin  
Tomato sauce large can 1   
White wine or water 1/3 Cup  
 1/2 cup each raisins and pitted ripe olives   (Did not use olives)
Frozen peas 1 Cup (16 tbs), thawed

Directions

Reserve chicken neck and giblets for other uses, if desired.
Rinse chicken; pat dry.

Heat oil in a 5 to 6-quart pan over medium-high heat. (I used a 12in. skillet)
Add chicken, a portion at a time, without crowding; cook, turning, until browned on all sides.

Lift out and set aside.
Discard all but 2 tablespoons drippings.

Add garlic, onion, and bell pepper to pan.
Cook, stirring, until onion is soft.

Cut potatoes into 1-inch chunks; add to pan along with oregano, cumin, tomato sauce, wine, raisins, olives, and chicken.
Bring to a boil; then reduce heat, cover, and simmer, turning chicken once, until meat near thighbone is no longer pink when slashed (35 to 40 minutes).

Skim and discard fat from sauce.
Stir in peas; cook just until hot.

This was very good we had leftovers and we enjoyed them very much!!

Crab In Black Bean Sauce


Serves 4

Ingredients

1 large cooked crab cleaned and cracked  (I used Imitation crab 2lbs)  
Salad oil 3 Tablespoon
Fermented black beans 1 1/2 Tablespoon, drained, rinsed
1 large clove garlic, minced 
Minced ginger 3/4 Teaspoon
1 small green pepper, seeded and cut in 1 inch squares (I did not use green pepper)
1 tablespoon each soy sauce and dry sherry
2 whole green onions, cut in 1-inch lengths 
Chicken broth 1/3 Cup (16 tbs)

Directions

Cut crab body in quarters; leave legs and claws whole.  (I used chunks of the imitation crab)
Heat a wok or wide frying pan over high heat.

When pan is hot, add oil.
When oil begins to heat, add black beans, garlic, and ginger.

Stir-fry for 5 seconds.
Add green pepper and stir-fry for 1 minute.

Add crab, soy, sherry, onion, and chicken broth.
Cook, stirring, until crab is hot      

This was good I served rice with this.
Mom had a nice time with the Navigators.  I was glad that she was able to go.  She needs to be able to get out and have a nice time. 

Dan goes to the doctor on Monday and has his operation on the 14Th.  I am praying that all things will work together for good!!

I am working this Friday and Saturday.  I have to work all of next weekend. 10-4,5.  I am glad for the time. 

Dan wants to go to Round Table all you  can eat pizza for our Twentieth anniversary, October 2ND.  Not a real big fan but, that’s OK.  Sometimes you have to give in once in a whileJ

Burritos Rancheros


Serves 6-8

Ingredients

1 (3 to 4 pound) beef chuck roast (I used Pork ribs)
2 tablespoons chili powder (I used 1 tablespoon)
1 teaspoon oregano
¼ teaspoon ground cumin
2 garlic cloves, crushed through a press
1 Anaheim, or other semi-hot green Chile, seeded and chopped
2 medium onions, chopped (I used green onion)
1 (28 ounce) can cut-up, peeled tomatoes, undrained
1 (30 ounce) can chili beans, drained
2 ½ to 3 tablespoons quick-mixing flour
3 tablespoons cold water
8 flour tortillas, warmed
1 cup shredded cheddar cheese (4 ounces)
Guacamole Supreme (Recipe follows)
¾ cup sour cream

 Methods/steps

1. In a 6 quart Dutch oven, brown beef on both sides over high heat.
2. Add chili powder, oregano, cumin, garlic, Chile, and onions.

3. Stir in tomatoes with their liquid.  Heat to boiling; reduce heat to low and cook 2 ½ to 3 hours, or until meat falls apart.
4. Remove meat from cooking liquid and let stand until cool enough to handle easily. (I cut up my meat ahead of time)

5. Add beans.  Blend together flour and cold water and stir into liquid in pot.  Heat to boiling, stirring.  Reduce heat to low and simmer 5 minutes.
6. Shred meat with a fork, discarding any fat and bones.  Return meat to pot and simmer 5 minutes.

7. Spoon some of meat and bean mixture down center of each tortilla.  Fold in ends and roll up.  Place seam side down on a plate and top with more hot meat mixture.  Top with cheese, Guacamole Supreme, and sour cream.

GUACAMOLE SUPREME

Mash 2 large ripe avocados with a fork.  Blend in ½ teaspoon seasoned salt, 1 garlic clove, minced, 1 teaspoon minced fresh cilantro (optional), and 2 tablespoons fresh lime juice.

This was very good.  Made enough for leftovers!!

I am on the antibiotic for the fifth time!!!  I wonder if I will ever be done with itL

Saw some friends at Costco the other day.  Hadn’t seen them in eons.  Their daughter sure has grown!! I think that she is three or four now.

I guess my Mom got to get together with some people that I haven’t seen in years.  They belong to a group called the navigators.  They are supposed to be a Christian group.  I did not find anything about them to be Christians. 

Not only did one of them take my money and said that he would give it back (never did).  One person (the head of the origination)  told some one (that I new) that they could not get married for three years (he had an affair)  Divorced his wife and went to California.  They also told my mom and me “Hay why don’t you guys move to the north end that way we can come over more often.  We moved and never saw them again.  I liked someone and the people he was living with told him that he shouldn’t see me anymore.  For a while they would not have bible study with mixed (guys and girls) then they started doing that.  I wasn’t invited. One of them married someone whom he said that he did not want to marry because he thought that she was too bossy.  He married her and I said to him I thought you said that you didn’t want to marry he because she was too bossy.  He would not talk to me and has never talked to me since. I guess it was because he new that he was marring because there was no one else for him.  I have tried to forget about these people and move on but my mom keeps bringing them up.  Much to my chagrinL

Spicy Tuna And Linguine With Garlic And Pine Nuts


Preparation Time35 Min Cooking Time30 Min Ready In1 Hr. 5 Min Servings 4

Ingredients

2 Tablespoon Olive oil
4 Clove garlic minced
2 Cup mushrooms sliced
1/2 Cup onion, chopped
1/2 Teaspoon, crushed red pepper (I used ¼ Tsp.)
2 1/2 cups chopped plum tomatoes
1 Can (14 oz.)chicken broth
½ Tsp. Salt
¼ Tsp. black pepper
9 Oz Fresh Linguine uncooked
1 Can Tuna (12oz), drained
1/3 C Cilantro, chopped (I used parsley)
1/3 cup toasted pine nuts or almonds (I did not toast the pine nuts)

Directions

1) In a 12-inch skillet, heated over medium-high heat, sauté garlic, mushrooms, onion and red pepper in hot olive oil until golden brown.
2) Bring this to a boil after adding in tomatoes, chicken broth mixture, salt and black pepper.

3) In a skillet, put separated strands of uncooked linguine and add cooked tomato sauce.
4) Minimize heat and cover and simmer for 4 more minutes until done.

5) Stir gently and mix in tuna and cilantro by tossing again.

This was good!!  We had some left over so Dan took it to work!!  Hopefully everyone was jealous!!

Fresno Potato Casserole


Serves 8

Ingredients:

2 1/2-3  lbs medium-size potatoes (thin-skinned)  
4  slices bacon, fried and crumbled  
4   green onions, chopped  
1/2 cup milk  
1  cup sour cream  
1  cup cheddar cheese, shredded  
 salt & pepper 
3/4 cup seasoned croutons, slightly crushed  
3  tablespoons butter, melted

Directions:

1  Boil potatoes just until tender.
2  Drain well.

3  Cool. (I peeled my potatoes and then cooked them)
4  Peel and cut into 1/4-inch slices.

5  In greased, shallow two quart casserole, arrange half of the potato slices.
6  Top with half of the bacon and onion.

7  Stir milk into sour cream; spread half the mixture over onion, then half the cheese. Season with salt and pepper.
8  Repeat layers.

9  Sprinkle with croutons and drizzle butter over all.
10  Bake in 350 degrees oven for 30 minutes or until hot throughout.

This was good!!
Going to the doctor tomorrow.  Hopefully no white cells in my urine. Dan is having his issues as well.  Hopefully in October he will get to see his doctor and get on the schedule for surgery.  It will be good to get it over with.

Was having some trouble with Microsoft office.  Thank God for Dan’s Brother Doug.  He helped me to solve the problem.  I was not able to access any of my spread sheets. 
Not working this week.  Have a “political meeting” on Saturday.  That’s it.  Working one day next week.  I know things will pick up soon because of the Holidays coming up.  I am not worried.  I am enjoying the time off.

We had dinner with the neighbors across the street.  Nice people.  She doesn’t speak much English though.  I could not believe it she likes boxing!!  One of the sports that I astutely hate!!!  I am hoping to fix them stand up chicken with in the next couple of weeks.  I hope that they will like it.

Turkey Fajitas


Ingredients

1/4 Cup lime juice
1 Tablespoon Balsamic vinegar (I used red wine vinegar)
1 Clove garlic
1⁄2 Teaspoon Ground coriander
1⁄2 Teaspoon Ground cumin
1⁄2 Teaspoon Honey
1 Pound, Turkey breast tenderloins cut into 1/2 by 2 inch strips (I used two chicken breasts)
4 9 inch reduced fat flour tortillas
1 Tablespoon Olive oil
1 Large, Red onion thinly sliced (I used green onion)
Lime wedges (I did not use lime wedges)
(called for 1 large bell pepper did not use it)

Directions

1. In a large bowl, stir together lime juice, vinegar, garlic, coriander, cumin, and honey. Add turkey and stir to coat. Set aside to marinate, stirring occasionally.
2. Brush tortillas lightly with hot water; then stack tortillas, wrap in foil, and heat in a 350°F (175°C) oven until warm (10 to 12 minutes).

3. Meanwhile, heat 2 teaspoons of the oil in a wide nonstick frying pan or wok over medium-high heat. When oil is hot, add bell pepper and onion and stir-fry until vegetables are lightly browned (2 to 3 minutes). Remove vegetables from pan with a slotted spoon and keep warm.
4. Heat remaining 1 teaspoon oil in pan. When oil is hot, lift turkey from marinade and drain briefly (reserve marinade). Add turkey to pan and stir-fry until no longer pink in center; cut to test (2 to 3 minutes). Add marinade and bring to a boil; return vegetables to pan and mix gently. Spoon mixture onto a platter.

5. Offer tortillas and lime wedges alongside turkey mixture. Fill tortillas with turkey mixture; add a squeeze of lime, roll up, and eat out of hand
This was very good!! I wrapped my tortillas in a paper towel and heated them for 30 seconds.

Tagliatelle With Pork And Beef ragu


Ingredients

2 Pound Boneless pork , cut in 1/2-inch pieces
1 Pound Boneless beef chuck, trimmed of fat and cut in 1/2-inch pieces
1 Tablespoon Olive oil
1 Small, Onion chopped
1 Small Carrot, peeled and chopped
2 Celery ribs, chopped
30 Ounce (1 Can) Canned Italian crushed tomatoes in puree
1 Cup Water
1 Teaspoon Rosemary
½ Teaspoon Salt
¼ Teaspoon pepper
1/8 Teaspoon Nutmeg
½ Cup Grated Romano Cheese
½ Cup Grated Parmesan Cheese

Directions
1. Trim excess fat from pork and beef. In a nonreactive large saucepan, heat oil over medium heat. Add pork and beef and cook, turning several times to brown evenly, about 4 to 5 minutes. Remove meat to a bowl and reserve. Add onion, carrot, and celery and cook 3 to 4 minutes, or until softened. Return meat to pan and add tomatoes, water, and rosemary. Bring to a boil, reduce heat to low, cover, and cook about 1 hour, or until meat is fork-tender and beginning to fall apart. Season with salt, pepper, and nutmeg.

This was very good!!!  We got to have leftovers!! Yes, I did use the Beef!!
Dan and I have been trading off being sick.  He had to go to urgent care three times!!!  He is doing better.  He will have to have surgery some time within the next couple of months.  His prostrate is enlarged L

Got to take Mom out to lunch this last Sunday.  We went to a Mexican restaurant out in the North end.  Food was great.  I wish that they would have taken the tales off the shrimp though.
Because of Dan having to go to urgent care and the doctor I missed two days of work. I am gad that I went with him, so, I am not com0plaining.  That is what a wife is supposed to do.  Be there when ever she is needed!! I am just saying that with my being sick and him being sick I have missed days that I could have worked.  So far the only day that I am working will be this coming Saturday.  Well it’s in Gods hands I will have to leave it there J
