Cheesy Garlic Bread


Original recipe makes 12 servings

1/2 cup butter or margarine, softened
 4 garlic cloves, minced

1/4 teaspoon dried oregano
1 (1 pound) loaf French bread, halved lengthwise

3 tablespoons grated Parmesan cheese

Directions

 1. In a small bowl, combine butter, garlic and oregano; spread on cut sides of bread. Sprinkle with Parmesan cheese. Place on an ungreased baking sheet. Broil for 3 minutes or until golden brown. Slice and serve hot.
I love a good garlic bread.  We had the with soup.


Mexican Pork Chops
 
Original recipe makes 4 servings
1 tablespoon vegetable oil
4 boneless pork chops
2 (14.5 ounce) cans chopped stewed tomatoes, with juice
1 (8.75 ounce) can whole kernel corn, drained
1 (8 ounce) can red kidney beans, drained
1/2 cup uncooked long grain white rice
1 (4 ounce) can diced green chilies, drained
1/4 teaspoon salt
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Heat the oil in a skillet over medium heat. Brown the pork chops about 5 minutes on each side. Remove chops from skillet and drain oil.
3. Mix the tomatoes, corn, kidney beans, rice, chilies, and salt into the skillet. Bring liquid to a boil. Cook and stir for 1 minute, until heated through. Transfer the tomato mixture to a baking dish. Arrange the browned pork chops over the mixture.
4. Bake covered 30 minutes in the preheated oven. Uncover, and continue baking 10 minutes, until rice is tender and pork has reached an internal temperature of 145 degrees F (63 degrees C).
This was very tasty.  The chops turned out moist. 
River Omelets
Original recipe makes 6 servings
10 eggs
1/3 cup milk
1/2 teaspoon salt
4 dashes hot pepper sauce, or to taste
1/2 pound bacon - cooked, and chopped into bite-size pieces
1 (4 ounce) can black olives, drained
2 roma (plum) tomatoes, chopped
1/4 cup green onions, chopped
1/3 cup mushrooms, sliced
3/4 cup Colby-Monterey Jack cheese, shredded
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Coat an 8 inch square baking dish with non-stick cooking spray.
2. In a large bowl, combine eggs and milk. With an electric mixer, beat until frothy. Blend in salt and hot pepper sauce. Stir in bacon, olives, tomatoes, green onions, mushrooms and cheese. Pour into prepared pan, and cover with lid or aluminum foil.
3. Bake in preheated oven for 40 to 50 minutes, or until eggs are set in the center.
Dan fixed this one.  We had enough for two days!!
 
Shrimp Verde

Original recipe makes 4 servings
2 tablespoons olive oil
2 cloves garlic, chopped
1/4 cup chopped green onion
1 pound fresh shrimp, peeled and deveined
1/2 cup Italian flat leaf parsley, chopped
1/2 cup freshly grated Parmesan cheese
Directions
1. Heat olive oil in a large skillet. Saute garlic and scallions briefly, but do not brown the garlic.
2. Toss in shrimp and saute until pink and opaque in the center. Stir in parsley and heat through.
3. Remove from heat and pour into a serving dish. Sprinkle with grated Parmesan cheese.
4. Serve with cooked pasta or rice
This recipe should be doubled!!  It was that good!!
The taste of Sams is finally over!!  What a zoo!!  People out the ying yang!!  I worked six days in a row!!!  I have the next three days off!!!  I get to spend black Friday with Dan.  I have to work Saturday.  On Sunday I am hoping to get together with my friend Jayne.  I haven’t seen her in a while.  It will be nice to see her.  I think that we are going out to lunch.  Not sure where yet.  I am sure that where ever we go it will be nice.
Linda (my supervisor) has suggested that I get a accommodation because I don’t want to do fry food.  I know that I can do that but I have never done it on such a grand scale before.  I feel more comfortable  doing microwave with some help.  Than I would doing fry foods.  I guess I will see what happens with that.
Mom is doing well.  She is crocheting like no bodies business.  It is so good to know that she is enjoying herself. 
We will be spending Thanksgiving with Jackie and family.  Katie for the first time will not be there.  She will be missed.  She starts nursing training in January.  Hopefully the time will go fast for her. 
I have put my piano on Craigslist.  So far no hits.  Just scammers.  I would really like to sell it.  If I can’t sell it I am going to see how much it will cost to ship it to Julie.  She said that she would like to have it.  I guess I will see what happens with that.
