Ingredients
- 2 cups chopped, cooked chicken meat
- 1 cup cooked white rice
- 1 (10.75 ounce) can condensed cream of chicken soup
- 2/3 cup mayonnaise
- 2 tablespoons grated onion
- 1/2 cup chopped celery
- 1 (8 ounce) can sliced water chestnuts
- 1 tablespoon lemon juice
- 1/2 cup shredded sharp Cheddar cheese
- 2 cups crushed potato chips
- 1/4 cup water
- salt and pepper to taste
Directions
1. Preheat oven to 400 degrees F (200 degrees C).
2. In a large bowl combine the chicken, rice, soup, mayonnaise, onion, celery, water chestnuts, lemon juice, water, salt and pepper. Mix well. Spread this mixture into a lightly greased 9x13 inch baking dish. Cover with cheese, then potato chips. Bake in the preheated oven for 20 to 25 minutes or until the potato chips are lightly browned.
We got the modem and the printer up and running. Hopefully the JET program will contune to run as well.Went to my Sister Jackie's house for a belated Birthday. We had a nice time. She made a really good fruit crisp. I will have to get the recipe from her.
Hard to beleve that she is 65 now. Wow! how time flies.
Hours at work are picking up becacue of the Holidays. I am working tomorrow and Friday and Saturday. So far not Sunday.
Going to have coffee with Jayne on Thursday. Looking forward to it. Haven't seen her for a while now.
Melinda still hasen't got the locks on her dores yet. I hate the fact that her brother can still come and go. I worrie about her. She is my friend and I want nothing but the best for her.
