Sausage Jambalaya


Prep: 25 min. Bake: 1 hour Yield: 8 Servings

 •12 small pork sausage links, cut into 1-inch pieces
•1 cup finely chopped onion
•1 cup finely chopped green pepper
•4 garlic cloves, minced
•2 tablespoons canola oil
•1-1/2 cups cubed cooked chicken
•1-1/2 cups cubed fully cooked ham
•1 can (28 ounces) diced tomatoes, undrained
•1 cup uncooked long-grain rice
•1 can (14-1/2 ounces) chicken broth
•3 tablespoons minced fresh parsley
•1 teaspoon salt
•1/2 to 1 teaspoon pepper
•1/2 to 3/4 teaspoon dried thyme

Directions
•In heavy skillet, saute the sausage, onion, green pepper and garlic in oil until vegetables are tender. Add chicken and ham; cook for 5 minutes. Stir in the remaining ingredients.

• Transfer to a 2-qt. baking dish. Cover and bake at 350° for 1 hour or until rice is tender and liquid absorbed.
This was very good!!  It was even good the next day!!

Had a nice time at Tom & Velva’s last weekend!!  Got to see Shara and Margo!! Every one is doing well.  Louie was feeling well enough to join us. 
I have worked Wednesday and Thursday.  I am also working Saturday.  After that it falls off again!!

Mom was not feeling well the other day.  Her asthma was bothering her.  My peek flow is still not doing well.  It’s hard to remember to take the medication on an empty stomach.  I will be seeing my Doctor on Tuesday.

Sausage Quiche


Prep: 15 min. Bake: 55 min. Yield: 6-8 Servings
 Ingredients

•1 package (8 ounces) breakfast sausage links
•1 unbaked pie pastry (9 inches)
•1 cup (4 ounces) shredded cheddar cheese
•4 eggs
•1 pint heavy whipping cream
•1/8 to 1/4 teaspoon ground nutmeg

 Directions
•In a skillet, brown sausages until no longer pink. Drain and cut into small pieces; place in the pie shell. Sprinkle with cheese. In a bowl, beat eggs; add cream and nutmeg. Pour over cheese.

• Bake at 350° for 55-60 minutes or until a knife inserted near the center comes out clean.
This was very good.  We had a salad to go with it, but, the salad did not turn out. 

Looking forward to seeing my Brother and his family this weekend.  The weather is supposed to be great and not too hot.  That’s good for me since I can’t deal with the heat any more. 
I am playing 13 words with friends with my cousin Robin.  I hope that we don’t start any more I think that is plenty for me!!!

Dan is going for his hearing aid fitting on Friday.  I think that he will be so surprised at what he can hear when he gets his new hearing aid.  It will probably be some time next month.   

Red Lobster Cheddar Bay Biscuits Copycat


Prep Time: 18 Min's Cook Time 10 Min's Serves: 8 15 Biscuits

Ingredients:

2 cups Bisquick
2/3 cup milk
1/2 cup cheddar cheese, shredded
1/2 cup butter or 1/2 cup margarine, melted
1/4 teaspoon garlic powder

Directions:

1. Heat oven to 450 degrees.
2. Mix Bisquick, milk and cheese until a soft dough forms.

3. Drop by spoon full onto an ungreased cookie sheet.
4. Bake 6-8 minutes or until golden brown.

5. Mix butter or margarine and garlic powder.
6. Brush mixture over warm biscuits before removing from cookie sheet.

I had about 8 biscuits the half cup of butter was too much.  They were very good other wise.

Brilliant Sautéed Broccoli


PREP 15 Min's COOK 10 Min's READY IN 25 Min's 6 servings

Ingredients

1 pound broccoli florets
 3 tablespoons finely grated Parmesan cheese
 1 teaspoon brown sugar
 2 tablespoons olive oil
 1 teaspoon red pepper flakes
 1/4 teaspoon kosher salt
 1/8 teaspoon freshly ground black pepper

Directions

1. Fill a pot with water and bring to a boil. Fill a large bowl or pot with half ice and half water. When the water comes to a boil, add the broccoli florets using a strainer with a handle if possible. Allow the broccoli to cook for 1 to 2 minutes until just tender. Immediately remove from the boiling water, using the strainer or draining, and transfer to bowl of ice to stop the cooking process. Immerse the broccoli completely in the ice water for a minute or two. Remove and place in a dish that has been lined with paper towels. This part can be done up to two days in advance.
2. In a cup or small bowl, mix together the Parmesan cheese and brown sugar; set aside.

3. Heat the oil in a large skillet over medium-high heat. Throw in the broccoli and season with red pepper flakes, salt and pepper. Stir to coat the broccoli, then cook and stir for 1 to 2 minutes. Remove from the heat and dust with the Parmesan cheese mixture.
This was very good!! We steamed the broccoli in the microwave.  Then we added it to the pan.  I love the sweet taste and the pepper bite!!

I have the weekend off!! Going to visit my brother and his family!!!  Looking forward to it!!  I haven’t seen them in a while.
We took the dog to the groomers.  He was so matted that they had to shame him!!! He has no hair on his tale and he looks so funny.  I wish that I could put a picture of him on here so that I could show every one what he looks like.  Dan hasn’t taken any pictures of him!!  I am surprised that he hasn’t.  I would love to show the before and after!!! It is too funny!!  We have to keep him out of the sun, for fear that he might get sun burnt!!  We will be taking him to get groomed every three months for now on.  I don’t want to put him through that again.  Pore dog!!

Last Minute Mushrooms


PREP 5 Min's COOK 10 Min's READY IN 15 Min's 2 servings

Ingredient

1 tablespoon butter
 1 1/2 cups fresh button mushrooms, sliced
 1/2 teaspoon seasoned salt

Directions

1. In a skillet, over medium heat, melt the butter. Add mushrooms, and sprinkle with seasoned salt. Cook, stirring occasionally, until mushrooms soften and become darker in color, about 10 minutes.

This was very good!!!  I accidentally misread the amount of mushrooms!!!  LOL I bought on and half pounds!!!  I just added more butter!!!

Crispy Chicken Wings


Prep: 15 min. Bake: 50 min. Yield: 10 Servings

Ingredients

•2 pounds chicken wings
•1/2 cup butter, melted
•1/4 teaspoon garlic powder
•1 cup dry bread crumbs
•1/2 cup grated Parmesan cheese
•2 tablespoons minced fresh parsley
•1/2 teaspoon salt
•1/4 teaspoon pepper

 Directions
•Cut chicken wings into three sections; discard wing tip sections.

• In a small shallow bowl, combine butter and garlic powder. In another bowl, combine the remaining ingredients. Dip chicken into butter mixture, then into crumb mixture.
• Place on greased baking sheet; bake at 350° for 50-60 minutes or until chicken juices run clear.

I did this Fran style!!! I used chicken legs and thighs instead of wings.  Turned out great!!  I cooked them 350 in convection oven for 45.  Juicy!!!
That’s what I love about recipes.  I some times make them my own and some times I fix em just like it says to do. 

I think that it would be interesting to see what other people would do with my recipes.

Mexican Corn


PREP 10 mins COOK 10 mins READY IN 20 mins 6 servings
Ingredients

2 (15.25 ounce) cans whole kernel corn, drained
 1 (8 ounce) package cream cheese
 1/4 cup butter
 10 jalapeno peppers, chopped (I used on jalapeno pepper)
 1 teaspoon garlic salt

Directions

1. In a medium saucepan combine corn, cream cheese, butter, jalapeno peppers and garlic salt. Cook over medium heat for about 10 minutes or until heated through, stirring constantly after cream cheese begins to melt.
This was really good!!  I used on pepper and it was enough for us.  I liked the crunch that the pepper made.

I have been reading Sherlock Holmes.  Really been enjoying the first volume.  For me this book is a keeper.  I have been also reading about the band the Allman brothers .  The sad thing about these guys is that their drug use and sex and alcohol ruled their lives.  To the point that they cared little for the women and their children. It is needless to say that this book is not a keeper. My next book will be a short Steven King book.
Work has been very slow.  Working one day a week.

We are looking into getting a wheel chair ramp.  Found three web sites that make the type of ramp that I am looking for.  Hopefully next month we will have a new ramp in place.

Taco Pork Chops


Prep/Total Time: 20 min. Yield: 4 Servings

 Ingredients

•4 boneless pork loin chops (6 ounces each)
•1 tablespoon canola oil
•1 can (8 ounces) tomato sauce
•1 cup water, divided
•1 medium onion, chopped
•1 envelope taco seasoning
•2 tablespoons all-purpose flour

 Directions

•In a large skillet, cook chops in oil over medium heat for 2-3 minutes on each side or until chops are lightly browned; drain. In a small bowl, combine the tomato sauce, 3/4 cup water, onion and taco seasoning. Pour over pork and bring to a boil. Reduce heat; cover and simmer for 4-5 minutes or until a thermometer reads 145°. Let meat stand 5 minutes before serving.
• Remove pork to a serving plate and keep warm. Combine flour and remaining water until smooth. Stir into skillet. Bring to a boil; cook and stir for 2 minutes or until sauce is thickened. Serve with pork chops.

These were really good!!!  Instead of doing them on the stove top I baked them.  I made up the sauce and pored it over the chops and baked them in 350 oven for 45 minutes.  Turned out great!!!

Pork Noodle Casserole


Prep: 25 min. Bake: 45 min. Yield: 8 Servings
 Ingredients

•2 cups uncooked egg noodles
•2 pounds boneless pork, cut into 3/4-inch cubes
•2 medium onions, chopped
•2 cans (15-1/4 ounces each) whole kernel corn, drained
•2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
•1/2 teaspoon salt
•1/2 teaspoon pepper

 Directions
•Cook noodles according to package directions. In a large skillet, cook pork and onions over medium heat until meat is no longer pink. Drain noodles. Stir the noodles, corn, soup, salt and pepper into the pork mixture.
• Transfer to a greased 3-qt. baking dish. Cover and bake at 350° for 30 minutes. Uncover; bake 15 minutes longer.

This was good.  I thought that it should have little button mushrooms.  Dan suggested bacon.
Jackie went to West Virginia to visit Jewels.  I guess that she was having car trouble.  She was able to get it fixed.

Looking into getting a wheel chair ramp.  I want to be able to have my friend jayne over and I want to make things easier for my Mom.  She has a hard time going down the stairs.  It is going to be metal.  I don’t want a wooden ramp.  To much work and up keep.
Looking for a dog groomer.  I want to get as much hair off of Earl as possible before we go down to Tom and Velva’s.  Hopefully less shedding.

We went to Ocean Shores.  Earl just loves it there.  He runs and runs for all he is worth.  It is so much fun to watch him.  He is so cute!!!
